iH8snOw has released snowbreeze 2.8b2 which now supports untethered jailbreak for iPhone 3GS old bootroom, which previously it didn’t. You can now jailbreak (untethered) iPhone 3GS on iOS 5b1 using snowbreeze 2.8b2.

Snowbreeze 2.8b2 supports jailbreak for the following devices:
iPhone 4
iPhone 3GS (untethered)
iPad 1
iPod touch 3G
iPod touch 4G
Remember this is untethered only for iPhone 3GS old bootroom so if you have an any other device from the above list it will be tethered jailbreak that is you will be required to boot in to jailbroken state using ibooty everytime. Kind of hectic.

To jailbreak your device using snowbreeze 2.8b2 follow the guide posted here. The guide is the same for all iDevices except the iPhone 3GS as you would not have to do the last part ( tethered mood boot using ibooty )
iOS 5 is only out for developers so this jailbreak is only meant for them, if you have an iOS 5 well you might have got it through some not-so-legal means.
If you really want to get iOS 5 on your iPhone, iPad, iPod touch then you can follow the guide posted here to download iOS 5 and activate developer UDID.
If you rely on carrier unlock then do not update to iOS 5 as you will most probably lose your unlockable baseband.
